I had major surgery to remove uterine fibroids at the end of January, and one of the hardest parts of recovery was that I had to surrender my duties as the household chef.

My husband Andy took over all cooking and did a phenomenal job, even creating some new recipes along the way. One of the dishes he came up with and made for me multiple times was this easy curried sweet potato soup.

It can be made on the stovetop or in the Instant Pot, and is suitable for gluten-free, Paleo, grain-free, dairy-free, Whole30, and vegan diets.

It is warming, creamy, and full of rich flavor. It is quick, simple, and a great option for a busy weeknight or any time you need a fast meal.

You’ll need a yellow curry powder, sometimes called Indian curry powder or Oriental curry powder, to season this soup.

Andy used the Frontier brand Indian Curry Powder. I’ve used the S&B brand Oriental Curry Powder in the past and it is a wonderful blend.

If you are a DIYer, there are plenty of recipes for mixing up your own curry powder if you do a web search. But, since many call for spices you may not regularly use, the easiest option may be to just purchase a blend. I did see this recipe that is a simplified DIY blend but I can’t vouch for the flavor.

This is a wonderful soup to serve either before or as a side with your main entree, or you can eat it alone. If you need more protein to call it a meal, you can do that easily by adding cooked ground meat.

Ground chicken, turkey, or pork work best. Brown the meat in a separate frying pan from the soup, then add it in after the soup has been pureed.

Curried Sweet Potato Soup

This easy curried sweet potato soup is a rich, warming, flavorful soup that is fast to cook on the stovetop or in the Instant Pot. Serve as a side or turn it into a meal by adding some browned ground meat.

Ingredients

  • 1 tbsp extra virgin olive oil
  • Half a large yellow or white onion, chopped
  • 4 cloves of garlic, minced
  • 2 large, or 3 small orange sweet potatoes, peeled and cubed
  • 4 carrots, peeled and roughly chopped
  • 2 cups chicken broth, plus additional if needed to cover all vegetables
  • 1-1/2 to 2 tbsp yellow curry powder (also called Indian or Oriental)
  • one 13.5 oz can full fat coconut milk
  • to taste, unrefined salt and freshly cracked black pepper

Instructions

  1. STOVETOP INSTRUCTIONS: Heat a medium to large pot with a lid over medium heat until hot. Add the oil and swirl to coat the pan. Add the onions and season with a little salt and saute for about 10 minutes. Add the garlic, stir, and cook for 1 minute more.
  2. Add the sweet potatoes, carrots, broth, and curry powder. Raise heat to high to bring to a bubble, then cover and reduce to medium low to simmer for about 20 minutes, or until the sweet potatoes and carrots are soft and easily pierced with a fork.
  3. Stir in the coconut milk and cook for another minute or two. Remove from heat and carefully blend with an immersion blender. Season as desired with salt and pepper, and add additional curry powder if you want a bolder flavor.
  4. INSTANT POT INSTRUCTIONS: first use the saute function to cook the onions and garlic as described for stovetop. Add the sweet potatoes, carrots, broth, curry powder, and pepper, close the lid, and use the manual function to cook for 3 minutes at high pressure. Wait until 10 minutes of natural pressure release, then use a spoon or oven mitt to open the steam release valve. Stir in the coconut milk and cook for another minute. Blend with an immersion blender, taste, and adjust seasonings as desired.
  5. OPTIONAL: To make this a meal, in a separate frying pan brown 1 lb of ground chicken, turkey, or pork seasoned with 1 tsp salt and 1/2 tsp black pepper. Add the cooked ground meat to the soup after it has been pureed.
