Nightshade-free Shepherd’s Pie
Cauliflower is a wonderful and versatile vegetable, but I was left disappointed when I tried using it as the mashed topping for shepherd’s pie. This recipe utilizes tropical starchy roots as the mashed potato replacement in a nourishing, nightshade- and dairy-free version of the classic dish.
Mashed Malanga, Taro, or Yuca: nightshade-free potato substitutes
Do you miss mashed potatoes, and wish you could have a starchy, savory substitute? Just hit up your local Asian or Hispanic grocery store to find malanga, taro, or yuca — 3 delicious tropical roots that you can use that make excellent potato substitutes. Bonus: they’re all low FODMAP, too!
Green Plantain Pancakes (autoimmune paleo, egg-free)
This recipe is for egg-free green plantain pancakes that you can eat while on the autoimmune paleo protocol. It is an adaptation of my plantain flour pancake recipe from last year. I’ve been making these at least once a week since starting the AIP — my husband and I both love them! And, for the egg-free variation, the texture is better with pureed fresh green plantains vs. plantain flour. You will definitely enjoy this recipe!
Paleo Plantain Flour Pancakes
I have tried a LOT of gluten-free/paleo pancake recipes, and I think that plantain flour pancakes are my new favorite. They have a lovely savory flavor, a pleasant, fluffy texture, and they are super easy to handle in the frying pan. Bonus: there is a variation for an egg-free, autoimmune paleo-friendly version here that uses gelatin. Whichever version you make, you will enjoy these!

Tostones, twice-fried green plantains, are a traditional side dish in many countries in Central and South America and the Caribbean. They are a versatile side dish that goes well with just about anything, from eggs, to meats, or just paired with avocado slices as a quick snack. Tender & juicy braised chicken with bacon, roots, and tubers
This is one of my absolute FAVORITE chicken recipes. The meat turns out tender, juicy, and delicious every time. It’s easy and incredibly versatile. The cut of chicken and the veggies can be switched around to accommodate your own personal taste, your dietary needs, and the ingredients you just happen to have on hand. This version uses bacon, carrots, potatoes, radishes, onion, white wine, tamari soy sauce, and dijon mustard for a hearty, filling, flavorful dish!
